This fun cookery course is aimed at the confident cook who wishes to further their own skills and impress your friends with some professional cookery techniques used in some of the best restaurants around the Country. A basic knowledge of cooking is not necessary, all you need is the confidence and desire to better your own culinary skills within a relaxed and welcoming environment.
- What will I study?
Cooking a fancy main course at a dinner party is often daunting, however here at Blackburn College a professional Chef will take you through the step by step process of preparing and cooking a dessert to the highest possible standard. You will be shown the correct cooking methods used in professional kitchens and also be shown how to garnish the finished dish using classic French techniques such as purees and pan searing.
Once you have been shown some of the trade secrets you will each cook your own perfect main course just how you would like it served in your favourite restaurants.
The course will cover how to cook Goosnargh Duckling, served with variations of celeriac, turned rainbows, Madeira sauce and hazelnut.

- Preparing our sauce
- Prepare and blanch vegetables
- Roasted hazelnuts
- Celeriac puree
- Prepare and cook our ducks
- Plate our main course
- Indulge and clean up
- Prawn toast demonstration
You will obtain the skills and knowledge to replicate todays dishes created in the comforts of your own home or even the workplace. These new skills can be showed off during dinner parties and special occasions when you want to bring the gourmet restaurant to your own home.

This 3 hour course will be delivered in a professional demonstration kitchen on campus at Blackburn College. With a blend of resources, this fun session is aimed to be mostly practical with elements of theory behind particular skills and topics.
