Who is the course for?

Delegates must be 16 or over and have a keen interest in this subject.

Through classroom based activities alongside a tutor and other delegates at a similar level.

Do you want to develop your creative flair? Have you seen cakes decorated to the highest standard and wished you could do that?

Well now you can.... Alongside our professionally trained patisserie chef you will learn and practise how to make the perfect royal icing, buttercream and filling creams every time. You will have the opportunity to see how it is done professionally and copy the techniques for pipe borders on cakes. You will also learn how to coat celebration cakes with marzipan, sugar paste and royal icing. By the end of this fun and creative course you will produce finished cakes that look like the professionals.

The course will cover:

Week 1 - Introduction

  • Making of royal icing and piping bags    
  • Practise piping
  • Demonstration making of buttercream & filling cream

Week 2 - Making of Marzipan & Sugar Paste Roses

  • Stencilled off pieces
  • Butterfly and hearts
  • Practise piping                                                                     

Week 3 - Decoration of a Simple Birthday/Celebration Cake 

  • Madeira type cake
  • Buttercream layered sugar paste to cover
  • Use of roses from last session, decorated with Royal icing & inscription to finish                             

Week 4 - Flat Icing Coating

  • Royal iced cake top with a run out number

Week 5 - Piping of Boarder Line Work

  • Completion of project      

Week 6 - Novelty Birthday Cake
